Eyeball Oreo Pops {Sunday Snack}

For the last few months, life has been a little on the chaotic side at our house.  Between back to school, soccer for both of the girls, my husband’s busy time of year at work, our trip to Hawaii, and a Lupus Flare for me, I feel like I’m playing catch up and some of the fun things I normally do have gone out the window.

When I posted this Spookamole Spider last week, I realized it’s been months since I posted a Sunday Snack recipe.  I decided to get back into the swing of things.  My girls love it when I do Sunday Snack posts because it ensures they get a fun treat at least once a week.

Since I’m still not feeling great (which means my creativity is a little lacking), I headed to my favorite source of inspiration…Pinterest! Since it’s October, I thought I’d do some Halloween themed snacks this month.   I found this recipe and I knew I had to make these.

Here’s what you’ll need to whip up a batch of Halloween Eyeball Oreo Pops:

  • 1 bag of lollipop sticks (I use Wilton Lollipop sticks, but you could also use popsicle sticks if you prefer)
  • Double Stuff Oreos
  • White Chocolate Chips or White Almond Bark
  • Lifesavers
  • Mini Chocolate Chips
  • Red Edible Food Marker, Small Tube of Red Icing, or Icing and Red Sugar Crystals (optional)

Instructions:

Begin by heating your chocolate in the microwave.  I used almond bark and heated it for 90 seconds up front and then in 15 second intervals after that.

While your candy is melting, carefully insert lollipop sticks into your Double Stuff Oreos.  I hold my cookie together while inserting the stick.

Once your candy is melted, spoon the white chocolate over your Oreo pops paying extra attention to the area where the Oreo meets the stick.  By adding additional chocolate there, you’ll ensure that your Oreo won’t slide around later.

When your Oreo is sufficiently covered, place your Oreo Pop on a sheet of wax paper to set.  While the candy coating is still soft, add a Life Saver and a mini chocolate chip to make the eye.

Once all eyes have been assembled, place your Eyeball Pops into the freezer and allow them to set for 30 minutes.  After 30 minutes, you’ll want to trim the excess chocolate off your Oreo Pops with a pair of clean kitchen shears.

Now it’s time to make the hard decision…keep your eyeballs the way they are or make them a little spookier.  If you decide to go for spooky, you’ll either need an edible food marker or some icing and red sugar crystals (or if you have a tube of red decorator’s icing that would be perfect, but I didn’t have a tube so I improvised).

I originally decided to use a red edible food marker, but for some reason my marker did not work well on my chocolate.  It took me forever to get blood vessels on 2 pops.  After a little thought, I figured I could probably use icing and red sugar crystals.

I placed a spoonful of buttercream frosting into a plastic sandwich bag, snipped off the corner, and piped icing onto my Eyeball Pop…

And then I sprinkled it with Red Sugar Crystals.

There you have it…a super fun treat for your little monster prince or princess!
